The origins of Trio Cafe at Coney Wines are direct and simple. Margaret Coney brought up a family of four, with token assistance from her lazy husband. Their demands for food were vociferous and neverending. From such beginnings, and having dismissed these children into the real world, it was but a short step for Margaret to don the apron again and move into the gleaming new cafe kitchen to ply her trade. She is a serious foodie. A sign of this interest, nay obsession, is the veritable library of cookbooks she has accumulated over 40 years and the voracious manner of their reading. When other members of the household pick up the daily newspaper over morning tea or lunch, Margaret is to be found, yes, browsing for new ideas in her Larousse Gastronomique recipe collection. TV offerings – Rick Stein, Gary Rhodes, Nick Nairn etc. etc. are all devoured with the same relish. From all this perusing, and with several years of catering for weddings/dinners under her belt, Margaret creates delicious recipes for the vineyard cafe.
